Our flour can be tracked back to the farms that produced the wheat, farms that are dedicated to repairing our agricultural ecosystems from the degradation that has happened in the past.

Shepherd's Grain branded flours are milled by Grain Craft, and the wheat is identity-preserved from the fields through the milling process.

PROOF

Produced from Hard Red Winter Wheat, Shepherd's Grain Low Gluten Bread Flour is a unique premium flour made from varieties of the highest end-use quality.

This low gluten flour has been our flagship flour for years and is favored by artisan bakers for its workability and consistency. The flavor and forgiveness is great for high-hydration fermented products and most baked goods.

OPUS

High in protein, Shepherd’s Grain High Gluten Flour is a premium strong flour made from a blend of Dark Northern Spring wheat varieties.

Its strong gluten strength still produces a pliable dough best served in bagels, traditional pretzels, pizzas, and other treats that need a strong dough and/or a long fermentation.

PÂTISSERIE

Shepherd’s Grain premium pastry flour is made from high-quality Soft White Wheats. Like our other flours, we select superior varieties and blend them for consistent high quality pastry flour.  

Used in pie doughs and other confections, Shepherd’s Grain pastry flour is a staple of the discerning pastry chef. Great for pastries like puffs, croissants, eclairs, cannoli, strudels, and more. We offer both unenriched and enriched Pastry Flour products.

NAPOLETANA

Shepherd’s Grain NAPOLETANA “00” Pizza Flour pairs regenerative agriculture with a world-class Neapolitan-style pizza flour made from specific wheat varieties known for their quality and flavor.

Finely milled to meet the low-ash specs typical of Neapolitan-style flours, Shepherd’s Grain NAPOLETANA “00” has the gluten strength and quality to create a soft and chewy crust on the inside, with a crispy and eye-appealing cornicione.

This flour is versatile and works well in applications requiring gluten strength with easy to handle dough.

SEMOLINA

Durum grown in southern Alberta, Canada near the city of Lethbridge is known for growing some of the best durum wheat in the world.

We produce a Semolina with high water absorption, a lovely golden color, and consistent results, especially for high-quality pastas, thick crust pizza, couscous, and more.

ENSEMBLE

The same Dark Northern Spring Wheat in our High Gluten Flour is milled to produce our Whole Wheat Flour. This whole grain flour is strong with added rich flavors and dietary fiber. Not only does it tolerate long fermentation, whole wheat flour wants it.

With high absorption and a rich, nutty flavor, Shepherd's Grain Whole Wheat flour satisfies even the most discerning whole grain enthusiasts. Great for pizza crust, cookies, pasta, dusting flour, as a thickening agent and used in breads.

Traceability & Quality

Shepherd's Grain was created to connect farmers dedicated to regenerative agriculture with end users and consumers. We have done this by cultivating relationships based on transparency and a mutual desire to see our food supply chains become more personal and sustainable.

Our quality is the foundation of it all, and our growers only produce varieties of wheat that have the highest end-use quality. We know how wheat from each farm performs in the mixer and oven, and we blend their wheat to ensure flour performance consistency.

Printed on each bag of flour is a lot code that can be paired to information on the farms that produced the wheat in that bag.

This has been our motto from the start. Creating a true and transparent identity-preserved supply chain for selling flour from wheat that is produced by regenerative farmers demands accountability. In a world where greenwashing is far too common, we have been distinguishing ourselves for over 20 years as pioneers in direct food supply chains built on verifiable regenerative agricultural practices. What you see here is what you get. The flour in the bag comes from a farm that has adopted regenerative practices. We also knew from the beginning that if the resulting flour from our farms was not good quality, this whole endeavor would go nowhere. But why settle for just "good?" It became clear that if we maintained identity of the wheat from the farms through the milling process, we could put together an unmatched quality control program. Food Alliance is a nonprofit organization that provides a comprehensive, whole system certification that addresses safe and fair working conditions, humane treatment of animals, and environmental stewardship for farmers, ranchers, and the food and beverage industries. Farms, ranches, and food and beverage businesses that meet Food Alliance’s standards, as determined by a third-party site inspection, use Food Alliance certification to differentiate their products, strengthen their brands, and create transparency around social and environmental responsibility. Shepherd's Grain's farmers, flours, and Grain Craft's mills that produce Shepherd's Grain flour are all Food Alliance Certified.

Salmon-Safe's peer-reviewed certification and accreditation program, leads the movement to implement farming practices and developments that protect water quality, maintain watershed health and restore habitat. The Salmon-Safe farm certification program is focused on management practices in six primary areas: riparian area management, water use management, erosion and sediment control, integrated pest management, and water quality protection, animal management, and biodiversity conservation. Shepherd's Grain farmers are Salmon-Safe certified.

The Non-GMO Project is a mission-driven nonprofit organization dedicated to building and protecting a non-GMO food supply.

The Non-GMO Project Standard is a consensus-based document crafted with the insight from dozens of industry experts, reflecting a dynamic range of perspectives. In a world of shifting and quickly developed technologies, the Standard remains current and collaborative through ongoing public comment periods. Because of this collaboration with engaged stakeholder groups, Non-GMO Project Verified is a meaningful and achievable way for suppliers, brands and retailers to show their commitment to providing consumers transparent choice in the marketplace.
